Veggie Tuesday

We have eaten more veggies in the last week, than I have eaten in my whole life. So anytime I come across a new vegetable dish we need to give it a try. As summer comes and the farmers markets open, more and more ideas pop into my head. I can't remember where or when I picked up this recipe, but I do know one mistake I made. The recipe calls for white balsamic. I was not paying attention. By letting this sit in the fridge for a couple of hours the flavors marry together very well. The gingerroot just adds a little sweetness to help tie all of the flavors together.

Cucumber Carrot Salad with Gingerroot

2 small carrots, thinly sliced
2 tablespoons minced fresh parsley
1 tablespoon olive oil
1 medium cucumber, peeled, halved lengthwise, seeded and thinly sliced
2 tablespoons minced fresh parsley
2 teaspoon WHITE balsamic vinegar
3/4 teaspoon minced fresh gingerroot
1/4 teaspoon salt
1/8 teaspoon pepper

In small bowl, mix the oil, vinegar, ginger, salt and pepper. In another bowl, combine the cucumber, carrots and parsley. Pour vinegar mixture over cucumber mixture and toss. Refrigerate for several hours.

It's hard to get white balsamic vinegar in this area. I'll have to send for some. This looks delicious.

What a nice coincidence. I've been looking at a carrot-ginger salad and here you have one. I've never had that combination before and was wondering if it were delicious. I see it here, and now I am convinced to try it.

I think we're thrown off by the white balsamic vinegar as well. My little city doesn't have a lot of "fancy" foods. Could there be another ingredient I could sub do you think?

There is a little sandwich shop around here that makes amazing ginger carrots! YUM!

Gingerroot and cucumber - serious YUM. Now WHITE balsamic I haven't seen yet. How does the taste and price compare to the dark?

I must be honest I have never heard of white balsamic or used it. I temporarily lost my head when I was making this and just used regular balsamic.

This looks great, I am actually making a cucumber salad tomorrow night! Mine is thai style, but I love the sound of this one too.
