Stay At Home Thursday

Not much in the cooking mood this week we have been sitting on pins and needles. Our son has six weeks left in Iraq and the soldier who lost it earlier this week, killing five soldiers was in our sons unit. We had not heard anything until yesterday, all is well. Now we can sleep and get back to cooking.
Mike the man of the house wanted to test out his new Roasted Raspberry Chipotle Sauce that her purchased at Costco. He is our little guest blogger today. I will say I was a little surprised at the taste and the color was out of this world I can't wait to find other items to use this Raspberry Chipotle Sauce on.The sweetness of the fresh raspberries is the perfect contrast to the spicy smoke of the chipotle pepper.
Raspberry Chipotle Steak Salad

1 top sirloin steak cut into strips
1 cucumber
1 avocado
2 cup fresh spinach leaves
1/4 cup chopped red onion
1/4 broccoli chopped bite size pieces
Roasted Raspberry Chipotle Sauce

Put cut steak on plate and pour Chipotle Sauce over to cover let sit half hour in fridge. BBQ steak on grill for three minutes on each side. While steak is cooking spread spinach leaves on plate add broccoli cucumber, avocado, and red onion. Place steak on top of salad greens and use Chipotle Sauce a dressing.

Yummy! raspberry and chipoltle sounds like a wonderful combination. No Costco here yet...it's being built. I'll have to add that to the "grand opening" shopping list!

That particular sauce is a wonder. We first had it in Texas and until it was available in Oregon my daughter, God love her, would mail it to us. The salad looks terrific and that guy of yours knows how to cook a steak.

What an interesting combination of flavors. I would have piced this up to and racked my brain on how to use it later. This steak salad is incredible and a perfect use for the sauce!

Oh my gosh! What a worry and a fright about your son. I am so glad to hear that he is well and is expected to be home soon. It must seem like forever waiting for his arrival.

The chipotle sauce sounds so good! I'm smacking my lips just thinking about it. No Costa within reasonable driving distance, but perhaps one day....sigh....the trade-offs for country living.

I am also thankful that your son is okay. I can't imagine how hard it was to wait to hear news. I'm glad it was good news and I'm glad he will be home soon. My little boy is only 2 years old.
Your salad looks fabulous and I wish I had a Costco to shop at. Sadly here in KY we do not have one. I'll keep hoping.

This sauce is GREAT! I loved reading about a NEW way to use this sauce. If you don't have a Costco near you, go to www.jelly.com and they have this GREAT sauce and a lot of other great flavors as well! You won't believe all the GREAT recipes this site has to offer with all their fantastic product!
