Low Cal Wednesday
Every time I make something thinking it is summer it get cold again. I will admit I have not made ice cream or the likeness since I was a child. Since we had all of the indigents we gave this one a try. The man did not seem to be very impressed he would probably would of liked, a LIKE IT from Cold Stone Creamery with nothing on it plain 1200 cal. I on the other hand, would rather spend my calories on two desserts or another entree. Here is a fun and easy low cal dessert and pretty also. I found this recipe in an old Light & Tasty Magazine. One 1/2 cup serving equals 95 calories and a trace of fat you cant beat that. The color was just beautiful. I did make one little change that would lower the calories even more to the original recipe. I halved the sugar and put half honey.Don't you just want to pick up the spoon and take a bite. The mint freshens your breath with each bite.
Watermelon Berry Sorbet
1 cup water
1/4 sugar
1/4 honey
2 cups cubed seedless watermelon
2 cups fresh strawberries, hulled
1 tablespoon minced fresh mint
In a small heavy saucepan, bring the water and sugar and honey to a boil. Cook and stir until sugar is dissolved. Remove from the heat; cool slightly.
Place the watermelon and strawberries in a blender or food processor; add sugar syrup. Cover and process for 2-3 minutes or until smooth. Strain and discard seeds and pulp. Transfer puree to a 13 in.x9-in. x 2-in. dish. Freeze for 1 hour or until edges begin to firm.
Stir in mint. Freeze 2 hours longer or until firm. Just before serving, transfer to a blender or food processor; cover and process for 2-3 minutes or until smooth.

I am really loving this recipe! I'm a big fan of sorbets, because they are less fattening than ice cream.
I don't like watermelon, as a rule-- but with strawberries...yes, indeed!

I've tried strawberry sorbet but have never added watermelon. What a great idea! So, in the spirit that washing one's car will make it rain, you are the one bringing on the cold weather bouts with your summer recipes? Girl, you need to knock it off! I'm ready for some warm weather! :)

I love making sorbet in the summertime, there are so many flavor options and it's relatively healthy!
