When I was a small child one of our neighbors delivered this beautiful pie. I thought it was a pie, but I was surprised it was a brownie with chewy chocolate on the bottom of all this cream. For years I have been making this same treat. It is very lovely to serve for guests or just for the kiddo's. You need to be sure and let it chill very well or it will not set up before you try and cut it.
Spearmint Brownie Torte
3/4 cup sugar
3 egg whites
dash of salt
1/2 teaspoon vanilla
3/4 cup fine chocolate-wafer crumbs
1 pint of whipping cream,
1/4 cup crushed spearmint candy
1 square unsweetened chocolate, shaved
Beat egg whites and salt until soft peaks form. Add sugar, 1 tablespoon at a time, beating after each addition until glossy. Beat in vanilla. Fold in chocolate wafer crumbs. Spread in nonstick
or greased 9 inch pie pan, piling high at sides. Bake at 325 F for 35 minutes. Let cool for at least 3 hours. Whip cream sweetened to taste with sugar add spearmint candy to color the cream. Spread cream mixture over chocolate brownie and pile high. Let chill for at least an hour. Before serving shave chocolate square over entire brownie.

I grew up with a mom that made cream pies in Texas, but never had this one. I myself have not attempted to make one in many many years...but yours looks so good, and I can use my imagination...

This desert looks sooooooo good. I have to say, anything with mint is my favorite. This looks so easy too. You have the best recipes.
Also, your sushi looks incredible. My question is..... does it really taste as good as the restaurant quality? I've always wanted to take a class, but I guess I'm too chicken. I also love, love, love sushi.

oh my gosh! that sounds delicious! it reminds me of the grasshopper pie/cake i used to get at baskin robbins when i was a kid. i had it every year for my birthday. chocolate and mint is such a delicious combination! yum :)

Hey Ms Pia the Sushi was great tasting I don't know about my cuts hopefully I will get better this was the first attempt. My daughter's friends parent's own Sushi TO Go I might have to go for another lesson what a blast but it was not cheap and they burned the ell. HAHA
